An Iranian Dish

Have  a Look at the New Dish I recently tested. Though Its not very new to the world but I had it for the first time and it tastes awesome.


Ingredients:-




  • 1 1/2 lbs. ground lamb.
  • 1 large onion, finely chopped.
  • 1 egg.
  • 1/2 tsp. salt.
  • 1/4 tsp. pepper.
  • 2 tbs. flour.
  • 1 1/2 cups uncooked rice.
  • 4 tbs. butter.
  • 3 tomatoes, halved.
  • Butter.
  • Salt.
  • Pepper


How to make it ?


  • Mix lamb, onion, egg, salt, pepper, and flouer until smooth and creamy.
  •  Shape into oblong patties about 5 inches long, 1 1/2 inches wide, and 1 inch thick; put aside.
  • Cook rice; sprinkle with cold water, shaking gently so each rice won't stick together. 
  • Drain for about 5 minutes. 
  • Melt butter in frying pan or shallow casserole (of a material which will stand direct heat) and pile the rice in it in a dome shape . 
  • Place over low heat on grill or range for 10 minutes to dry rice. 
  • Meanwhile, cook lamb patties in a hinged wire broiler on barbecue for about 10 minutes on each side.
  •  Dot tomato halves with butter; salt and pepper and place on grill for about 8 minutes. 
  • Stack cooked lamb patties on rice dome; arrange tomatoes at bottom or on separate plate. 
  • Serve hot.

Fish again

Recently I had a very tasty dish , of course of a fish , different from the traditional ones that I had before and I'm just in love with it...

Grilled bekti with Bengal berry sauce


Ingredients

  • 6 pieces bekti fillet . 
  • 45g flour 
  • 1 egg l20g green chilli paste 
  • 30g coriander powder 
  • 15g cumin powder  
  • 45g Bengal berry (topa kul) pickle 
  • 15g chopped onion 
  • 10g chopped garlic 
  • 10g tamarind pulp 
  • 50ml cooking cream



How to make it :-

Soak the pickle in warm water.
Marinate the fish with lime juice, flour, egg, 1/3rd of the cumin and coriander powder, salt and a bit of the chilli paste.Set aside for 10-15 minutes. 
Grill the fish in a non-stick pan. Keep warm. 
Squash the berries in the pickle to de-seed them. 
Now prepare the sauce by heating oil in a pan. Temper with half of the crushed coriander and cumin seeds. 
Add the chopped onion and garlic, sauté till transparent.
Add fish stock and the berry pickle, mix well to combine. Simmer gently. 
Add the rest of the ingredients and cook. 
Check for seasoning. 
Arrange the grilled fish on a serving platter and pour the sauce over the fish. 
Serve with steamed rice and stir-fried greens.

Chicken Macaroni Salad..

Guys have a look at a new non-veg salad :-

Ingredients:-
  •         1/5 kilo macaroni noodles. 
  •     2 to 3 pieces, medium sized carrots.
  •     1 big chicken breast.
  •     500 ml of mayonnaise.
  •     1 can (836 g) pineapple chunks or tidbits.
  •     1 big white onion, finely chopped.
  •     1/2 cup sweet pickle relish.
  •     3 hardboiled eggs, diced.
  •     1 cup diced cheddar cheese.
  •     1/2 cup raisins.
  •     Some Fruits to garnish (if you want).
How to make it:-

  • Cook macaroni noodles according to package cooking instructions.
  • In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
  • Drain carrots and let cool. Peal skin then dice. 
  • Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths.
  • Drain pineapple chunks or tidbits.
  • Combine all ingredients while adding salt and pepper, to taste.
  • Refrigerate, then serve.
  • Add some fruits to garnish..
The salad is now ready to be served....

A Dish from Singapore....

This is a dish from Singapore or you can see it can be found in many parts of the world . Its the GREEN RICE. I recently tasted it and liked it over the tradition fried rice.


Ingredients:-
  • 2 tablespoon butter.
  • Cardamom leaves.
  • Some Cloves.
  • Cumin  Powder.
  • Lemon grass.
  • Salt .
  • Coriander seeds.
  • A bit of garlic.
  • Rice.
  • Coriander leaf for soup
  • Vegetable soup.
  • Some raisins to garnish.
  • Some cardamom leaves to garnish.





How to make it :-

For vegetable soup :-
Nicely crush different vegetables and  make a soup of it.

For Coriander soup :-
Separately nicely crush cardamom leaf and cardamom seeds and cook it in a pressure cooker to make a soup of it.


  • First put some butter (about 2 table spoon ) in a cooker and add some cardamom seeds, some lemon grass, coriander seeds, a few cloves , small amount of cumin powder and a bit of garlic and stir for a while.
  • Add the Rice that was already washed and kept for with some water for about an hour and cook it with the above spices in the cooker.
  • Add some vegetable soup with the rice and stir it till it is a little dry.
  • Add coriander soup to the rice (its amount will be more than that of vegetable soup) and stir it or if you feel that the rice is still hard just cover it to make the rice soft. 
  • After the rice is soft stir the rice till it is completely dry. The color of the rice would be green.
  • Serve it in a plate.
Add some raisins and cardamom leaves to garnish.

A DISH FOR YOUR VALENTINE.....

Since February is not too far...and valentine's day is knocking the door, here is a perfect sweet dish for the love birds.. You can definitely give it a try to make your valentine thrilled about you.

Well the Ingredients are as under:-

  •     2 apples, peeled, stoned and coarsely chopped.
  •     1 cup of all-purpose flour.
  •     ¾ cup icing sugar.
  •     2 tablespoon Butter  .
  •     Vanilla Ice-cream or fresh cream for serving (optional).
  •     Some Rose petals to garnish.


The Preparation goes like this:

In a thick bottom flask take the chopped apples and mix well with ½ cup icing sugar.
     
Stew the apples over low flame with occasional stirring.
         
 The apples should become soft but not totally a puree.

Place the apples in an oven proof pan.

Mix the remaining sugar with the all-purpose flour and butter until it looks like bread  crump.

Cover the cooked apple with the flour mix.

Preheat the oven to 150°C.

Place the pan in the middle rack of the preheated oven and cook for 30 min or till the upper layer turns light brown.

Take out and serve hot with fresh cream or vanilla ice-cream.

You can also use some rose petals to garnish the dish.
